Andrew’s Eggs in the Hole

Andrew doesn’t cook a whole lot, but he has mastered the art of the perfect egg in a hole. He uses Farm Fresh eggs from his friend Tony–the really good ones with the bright yellow yolks and the fun colored shells. This is a quick protein-filled “snack” after many a night on the football field!

Andrew’s Eggs in the Hole

Melt butter in the bottom of a frying pan. Pull the centers out of the bread, and eat promptly. Put the bread in the pan, carefully break eggs into the middle of the bread, cook on first side about 2 minutes, flip over and cook the second side for another minute or until done to desired firmness, add salt and pepper to taste. Wala–perfect Eggs in the Hole!!

Cutting a mozzarella ball

I love using fresh mozzarella balls! They can be tricky to cut nicely so here are some tips:
1. Freeze the cheese slightly-less than 30 minutes to firm it up
2. Use a cheese knife like the one shown. It is plastic and doesn’t rip the cheese during cutting. I have also used serrated knives, but you don’t end up with as nice a cut as the cheese knife.
NOTES: You can also get the smaller balls at the deli counter and they are fun to put on a skewer with a cherry tomato with balsamic vinegar and salt and pepper–an easy appetizer for summer!
