Pecan Meltaways

I know, don’t you want to just pop one of these in your mouth right now?? Truly, I always say that I share with you easy recipes so you don’t have to spend a lot of time in the kitchen, and this in one of those recipes and except maybe for the pecans, you probably have all the items in your pantry. So what are you waiting for, make up a batch and share them with your family tonight…

Pecan Meltaways

Ingredients:

1 cup butter-at room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 1/4 cups flour
1/4 teaspoon salt
3/4 cup chopped pecans
Additional powdered sugar for sprinkling on top

Directions:

Preheat oven to 350 degrees. In a large bowl, cream the butter, powdered sugar and vanilla until light and fluffy. Combine flour and the salt and gradually add it into the creamed mixture. Stir in pecans. Refrigerate until the oven is heated up.

Roll into 1 inch balls and place on ungreased cookie sheet/ Bake for 10-12 minutes. Roll the warm cookies in additional powdered sugar and cool on wire racks.

    Annie, I have always loved these kind of cookies. Yours looks so yummy! They are melt in your mouth good. My Aunt Ionia made a version of these every christmas Eve for the cookie tray — yum. Joni
