Mashed Sweet Potatoes

I made this for Thanksgiving last year and out of 10 of us, only 2 like sweet potatoes–really? Really! The good thing– more for the 2 of us. So I made a very small casserole dish of this recipe and those 2 of us, really loved it…

Mashed Sweet Potatoes

Yield: 6-8 servings

Cook Time: 35 minutes

Ingredients:

1 pound sweet potatoes
1 tablespoon butter
2 tablespoons maple syrup
1/2 teaspoon grated orange zest
1/2 teaspoon balsamic vinegar
salt and pepper-to taste
1/2 cup pecans-chopped
1 cup mini marshmallows

Directions:

Preheat oven to 400 degrees. Pierce sweet potatoes with a fork, place on a baking sheet and bake for 45-60 minutes or until a knife slides through it easily. Cut potatoes in half and scoop the flesh out into a small mixing bowl. In a medium saucepan, heat butter, syrup, orange zest and balsamic vinegar over medium heat. Remove from heat, mash the potatoes and stir in the butter mixture. Place in a greased baking dish, top with the pecans. Bake for 30 minutes, then add the marshmallows for 5 more minutes.

    You’ve perfected a classic! I need to start making small dishes of my favorites that no one else will touch! I bought some Brussels sprouts, but probably enough to feed an army…and I’m not an army…LOL. Have a wonderful Thanksgiving, my friend! xo
