Creamed Corn Stuffing Bake

I know, I know, that is a really long name for this recipe, however, I didn’t know how to convey all the yummy ingredients in 2 or 3 words. For my family, no meal is complete without corn as the vegetable. So in an attempt to jazz up the corn this year, I tried this mix and we LOVED it, kids included. So, if your family is into corn like we are, give this a try…


Creamed Corn Stuffing Bake


1 (14.75 ounce) can creamed corn
1 (15.25 ounce) can corn-drained
1 package boxed stuffing mix (I used chicken flavored from Stouffer's)
1/2 cup onion-diced
1/2 cup red pepper-diced
1/2 cup butter-melted
1/2 cup water
1/2 teaspoon garlic powder
Salt and pepper to taste


Preheat oven to 350 degrees. In a mixing bowl, combine all the ingredients, stir well and spoon into a greased 2-quart casserole dish. Bake, uncovered for 30 minutes.

    Anne, this looks delicious. My kids love corn and they love stuffing so combining these two they would be in heaven. Love this recipe 🙂

    Do you make the stuffing before you mix it in with everything else? Or do you just add the dry stuffing mix?

    I’ve been doing holiday dinners for over 40 years and have made stuffing every way possible, except this idea.
    Being a southerner I often use cornbread in my stuffing and the addition of creamed corn seems perfect!
    Except I”m just going to use the one can of creamed corn and no bell pepper with a bread mix, so that it will not dominate. The end result will still be more like traditional stuffing. Also substitute chicken stock for the water.
