This is one of those recipes that I hate to even post because it is so easy. However upon further review, I decided that that’s JUST the kind of recipe to share because sometimes it really helps to have something easy in your arsenal…

Spicy Pumpkin Bars
Ingredients:
3 eggs- beaten
1-15 ounce can pumpkin
1 cup sugar
1-12 ounce can evaporated milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1-18-1/4 ounce package spice cake mix
3/4 cup butter-thinly sliced
1 cup chopped pecans
1 can cream cheese frostingDirections:
Preheat oven to 350 degrees. In a large bowl, beat eggs and pumpkin together. Blend in sugar, evaporated milk, vanilla and spices. Pour into a greased 9 x 13 baking pan. Sprinkle dry cake mix evenly over the top of batter. Dot with butter slices, making sure to place some in the corners of the pan. Sprinkle pecans over the top. Bake for 55 minutes. Frost with cream cheese frosting.
