I just love apple season! Of course, you can get apples all year around but there’s nothing better than when they are in-season and cheap, that’s my cue to go apple crazy. Here is a super fast easy applesauce that you can whip together in 15 minutes (plus the cooking time) and have ready for the table tonight. I used MacIntosh because they are my favorite and are such a classic, but you could also use Gala or Braeburn…
4 pounds apples-peeled, cored and sliced
1/4 cup fresh lemon juice
1 1/2 cups water
2 tablespoons brown sugar
2 teaspoons cinnamon (optional)
In a large pot, bring apples, lemon juice and water to a boil over high heat. Reduce heat and simmer until apple are soft-about 20-25 minutes. Mash the apples with a potato masher. Add the brown sugar and the cinnamon (if desired). Cool then transfer to storage dish. Freeze up to 2 months or eat within 5 days.
