Sugar Cookies & Happy 4th of July

Happy 4th of July my friends! I just have to say…where does the time go?? Here we are in the middle of the year once again, crazy! I wanted to share this super easy sugar cookie recipe with you today and not only were they fun to make in red, white and blue, but I can see them in pink and blue for a baby shower, or any number of colors for any other holiday…

Sugar Cookies

Ingredients:

1/2 cup butter-softened
1/2 cup shortening
2 cups sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
1/8 teaspoon salt
3 egg yolks-room temperature
1/2 teaspoon vanilla extract
1 3/4 cup flour
decorating sugars

Directions:

Preheat oven to 300 degrees. In a mixing bowl, beat butter and shortening on medium for 30 seconds. Add sugar, baking soda, cream of tartar and salt; beat until combined. Add egg yolks and vanilla; beat until combines. Beat in as much of the flour as you can with the mixer, then stir in by hand any remaining flour.

Shape dough into 1-inch balls (I used a small scooper for uniformity). Dip half of each ball in decorator's sugar. Place balls, sugar side up on a baking sheet with a Silpat liner, about 2 inches apart. Bake for 12-14 minutes, or until edges are set; do not let edges brown. Cool on a wire rack.
