Fluffernutter Frosting

I made the most FANTASTIC frosting the other day and just had to share! I got it from one of my fave sites Confessions of a Cookbook Queen, go check her out, she’s got the best recipes and a great sense of humor to boot! Anyway, I made the cupcakes using just a plain old box of Duncan hines Chocolate cake mix, which is always awesome, but then the addition of this frosting…to. die. for…

Fluffernutter Frosting

Ingredients:

2 sticks butter-at room temperature
1 cup smooth peanut butter
1 teaspoon vanilla
1/4 cup milk
4 cups powdered sugar
1 jar (7 ounce) marshmallow creme

Directions:

In a large mixing bowl, beat butter, peanut butter, vanilla and milk on medium-low speed until smooth. Slowly add powdered sugar, beating on low until just barely mixed. Increase speed to medium high and beat for about 2 minutes. Using a rubber spatula, barely fold in the marshmallow creme so you see the swirls of color.

Spoon the frosting into a zip-loc bag, clip the tip and pipe the frosting on the cupcakes. TOp with a Nutter Butter cookie
