My Dad and my father-in-law are HUGE cookie lovers! To say they are cookie monster’s is an understatement. So when Father’s Day rolled around, I made them each a 6-pack of cookies that were almost the size of their face, and they were all gone by the same evening, now that’s saying something about these cookies…

Chocolate Chip & Heath Toffee Bits Cookies

Yield: 30 cookies

Ingredients:

4 1/2 cups flour
2 teaspoons salt
2 teaspoons baking soda
4 sticks butter-at room temperature
2 cups sugar
1 cup brown sugar
4 eggs
4 teaspoons vanilla extract
1 (10 ounce bag) swirled Nestle chips (or whatever you have on hand)
1 (8 ounce) bag Heath toffee bits

Directions:

Preheat oven to 375 degrees.

In a medium mixing bowl, stir the flour, salt and baking soda together; set aside.

In the bowl of your stand mixer, cream the butter and sugars until well mixed. Add the eggs, one by one and vanilla; mix well. Slowly add the flour mixture and stir to incorporate, but do not over mix. Remove the bowl from the mixer and stir in the chips and bits.

Line your baking sheets with a SILPAT liner or parchment paper. Use a medium ice cream scoop to scoop out about 4, maybe 5 cookies to a sheet (you don't want them to run together when they cook).

Bake for 12-13 minutes. Let cool on the baking sheet for 2 minutes, then remove to a wire rack to cool completely.

    Annie, the cookies look fab! I had an aunt who always gave gifts of her kitchen goods. Your photography is so lovely. I am going to try to remember to put pesto on my next burger….great idea. Thanks for your encouraging words about our move. It will be an adventure. Joni
