BLT Summer Pasta Salad

One of our son’s best friends who is also our employee, who is also like a third son, recently graduated from college!! So for his party, I had to come up with something really different. If you’ve read this blog at all over the last 3 years (yes, I missed my 3 year anniversary last month) you will know that I love BLT’s (hold the “t” add “cheese”) and s’mores.

Since I couldn’t figure out a way to make a s’more salad, I made this instead. I usually make my recipes and then it takes about 3-4 months to see them come to fruition on this blog. This recipe, however, I had to write and share right away because it is that good…

BLT Pasta Salad

Yield: This makes a huge salad!

Ingredients:

12 ounces pasta
1/3 cup milk
1 package (12 ounces) bacon, cooked and cut up (reserve 2 tablespoons of the grease)
2 garlic cloves-minced
2 cups cherry tomatoes-halved and quartered if neccesary
3/4 cup mayonnaise
3/4 cup light sour cream
3 tablespoons chives-chopped
Salt and pepper, to taste
2 romaine hearts-chopped
Parmesan-shaved

Directions:

Cook the pasta in a large pot according to the package directions. Drain, put in a large bowl and mix with the milk (this will help the pasta not stick together as it cools).

In the skillet with the reserved bacon grease, add the minced garlic and cook about a minute. Add the tomatoes and cook about a minute more, or until warmed through. Pour over the pasta and mix.

In a small bowl, mix the mayonnaise and soure cream together. Add in the chives and season well with salt and pepper. Mix in to the pasta, adding more milk if you need more mositure. Toss in the romaine hearts and bacon and top with shaved Parmesan cheese

    How far in advance do you think this could be made? Or is it something that should be served the same day?

      I would make up all the ingredients a day ahead then mix it all together right before serving

    OMG, that looks so good. I am catering huge grad BBQ for my best friend’s daughter next week and I was just thinking about salads….this looks like a winner to me. I think I have to make double cause I might eat it all :)

    This is exactly the kind of salad that I need for these hot days of summer coming upon us (so early too), I know for a fact that my husband would devour this!!!!! Great post Anne!!!!
