Bars are just about my favorite dessert and I’ve been on a real kick with them lately. It seems they are the perfect thing to take to a party or to have on hand when unexpected guests show up. Almond Joy Bars

Yield: 18 bars

Prep Time: 15 minutes

Cook Time: 10 + 12 minutes

Ingredients:

3/4 cup graham cracker crumbs
1/2 stick butter-melted
1 can condensed milk
1/2 bag (6 ounces) shredded coconut
1/2 cup almonds-chopped
1 cup semi-sweet chocolate chips
1 tablespoon butter
1/2 cup cream

Directions:

Preheat oven to 325 degrees. Pour graham cracker crumbs into the bottom of an 8 x 8 baking dish, add butter, stir and pat flat in the bottom of the dish. Bake for 10 minutes.

Pour condensed milk into a bowl and microwave for about a minute, just until warmed. Add in the coconut, stir and spread over the crust. Bake 12 minutes, but watch carefully so as not to burn the coconut.

Let cool slightly. Meanhwile, melt the chocolate, butter and cream in the microwave, stir. Sprinkle the almonds over the cocounut and pour the chocolate over the nuts.

Cool completely and refrigerate before cutting.
