Cucumber Cheesy Bites
Ingredients:
1 medium seedless cucumber-cut into 1/8 inch discs
1/2 cup Boursin Light garlic and herb cheese spread
2 tablespoons chives-chopped
4 pieces of bacon-cooked and dicedDirections:
Spread a small amount of cheese on each cucumber disk. Sprinkle with chives and top with bacon.













Many times it is the easy things like this that are the best! With bacon they just have to be good.

Just stopped by to wish you a wonderful Spring Weekend. I actually have Lite Boursin in my fridge and this is a ‘healthy’ way to finish the container.
I am thinking Noodle Kugel for our next collaboration because I am trying to make a good but lite version. Is the original actually made from potatoes because I have always known it with noodle only. I have seen a sweet potato/noodle version, am I close….lol
