Avocado/Feta Dip
This recipe came about because of my family’s desire to not eat tomatoes and since I don’t keep tomatoes on hand as a rule, I had to think on my feet. What I do usually have on hand is red bell peppers-mmm, we do love those! SO I just substituted them for the tomatoes and away I went, and was it ever good and a little extra crunchy, too…

Avocado/Feta Dip
Ingredients:
2 avocados-diced small
1 scallion thinly sliced
4 ounces crumbled feta cheese
1 red bell pepper-diced
2 teaspoons dried dill weed
1 tablespoons fresh lemon juice
Salt and pepper-to tasteDirections:
Mix all the ingredients together and serve with tortilla chips or baguette slices.

Wow so many lovely recipes, I am looking for lots of inspiration at the moment. Having had a little baby boy last August we are just at the weaning stage and so I am looking for quick and yummy recipes for myself and ones which I can incorporate some of the ingredients into purees for my little one. He LOVES avocado
I spotted you have two grown up sons. Wow I am just beginning my journey as a mummy and everyone (with sons of course!!) keeps telling me boys are best!
