Eggs Benedict-My Way

My favorite eggs benedict was at the Coffee House at Treasure Island in Las Vegas–they use filet mignon, yummy.  My second favorite way to eat eggs benedict is this way-with sausage patties.  As you can see, I am not a huge fan of Canadian bacon–nothin’ against the Canadians of course, it’s just not my favorite choice.  But any way you slice it, or whatever meat you choose to put with it, it’s really the Hollandaise sauce that makes the whole meal…

Eggs Benedict-My Way

Ingredients:

(for the Hollandaise sauce)

2 egg yolks
2 teaspoons fresh lemon juice
1 teaspoon water
1 stick butter-melted
pinch of paprika
salt and pepper to taste
more water, if needed

Directions:

In a blender, mix the egg yolks, lemon juice and water until mixed. With the blender running, slowly drizzle in the melted butter until the mixture emulsifies. Season with the paprika, salt and pepper and add more water until you get the desired consistency you want.

To make the meal, toast English muffin halves, cook the sausage patties, poach the eggs*, then layer one of top of the other and cover in hollandaise.

**The best way to poach an egg is to bring water to a slow bowl in a saucepan, add 1 teaspoon vinegar and start slowly swirling the water. As the water is swirling, slowly break an egg into the swirl-this will help keep it all together. When it has cooked to desired consistency, using a slotted spoon, remove it from the water and set it on a paper towel to drain.

    My husband adores eggs benedict and I have yet to make it for him. He would go ga-ga for one made with a filet for sure! I hope you're having a wonderful holiday season Anne.     Eggs benedict are one of our favorites – with filet?!!!! Out of this world!!!! I am going to try that. We have some filet left over from Christmas Eve. Sausage sounds fun too. I have even had it on a crab cake – but Hollandaise on rocks would probably be delish too! Hope you had a wonderful Christmas and have a great New Year.

    I decided to upgrade the TV in my kitchen. Had been using a 13 CRT but wanted a flat screen like the rest of the TVS in the house. Actually didn’t buy this from Amazon. Bought it locally because the price was the same and I could have it NOW! Another plus was that if I decided that I really didn’t like the TV or its sound I could easily and quickly return it. The only downside was state taxes. First off I should say I have no problem with the sound portion of this TV. A few other have commented on that but it plays and sounds just fine. I have a 7.1 surround sound hooked to my main television so I have a reference. No, I’m not even trying to compare the two but I am aware of sound quality. This is quite a bargain and the overall quality is more than satisfactory. I was a good choice for me and therefore I can recommend it.Update: after listening to the sound produced by this TV for maybe a month or so, I decided to add a set of small speakers to it which has improved the sound quality dramatically. Though it was possible to listen to it originally, adding the speakers completely removed any sound issue.
