Cheesy Mashed Potato Bake
I had never made a dish quite like this before-where you bake the potatoes the day before. But it’s always fun to try something new, and I liked the ease of preparation on the day that we ate it….
Cheesy Mashed Potato Bake
INGREDIENTS:
4-5 Russet potatoes
2 shallots-minced
1 garlic clove-diced
1 3/4 cups sour cream
2 1/2 cups white cheddar cheese-grated
Salt & pepper to taste
DIRECTIONS:
Preheat oven to 350 degrees. Wrap the Russet potatoes in aluminum foil and bake for about an hour, or until done. Unwrap and let cool, then re-wrap and refrigerate over night.
The next day, preheat oven to 350 degrees. Peel the potatoes and put through a potato ricer or grater. Put into a large mixing bowl. gently add in the shallots, garlic, sour cream, 1 1/2 cups of the cheddar cheese and slat and pepper. Place in a greased 9 x 13 baking dish, do not pack down or mash! Cover with the rest of the cheese. Cover with foil and bake for 30 minutes. Remove the foil and brown for another 10 minutes.
**I know that this recipe as a fancy name and I don’t remember what it is or where I got it from, I memorized it and tried to recreate it.
