Non-Creamy Cole Slaw

I have been wanting to make a cole slaw without the usual creamy dressing for some time.  So after perusing many such recipes and not seeing anything that was quite right, I just mixed a few of those recipes together and wa-la– a super fresh and refreshing slaw that can stand up to an outdoor picnic…


Non-Creamy Cole Slaw


INGREDIENTS:


1 bag of pre-shredded cabbage
1 cup matchstick carrots
1 cup (about 10) radishes-matchsticked (I used a fancy tool but you cold just slice them thin)
4 scallions-sliced thin-whites and greens
Salt and pepper, to taste
1/2 freshly squeezed lime juice
4-6 tablespoons olive oil


DIRECTIONS:


In a large bowl, add all the vegetables and mix well.  Mix in the olive oil, starting slow so you don’t get too much, then squeeze the lime juice over it and season with salt and pepper to your liking.


**In the future I would also add fresh peas to make it heartier.

    I really like this recipe with the lime juice and without all the usual mayo – very nice!

    I love this! I'm all about light and refreshing. Personally, I really dislike mayo based coleslaw so this is a welcome change.

    I love simple slaws like this. They can be served with anything, and are perfect for bbqs when you don't want a dressing that can't sit for awhile. Nice recipe!
