Lime Fizz

This little delight comes courtesy of my mother-in-law and she got it from Southern Living magazine.  She served it to the girls for Mother’s Day and it was a refreshing, lip smacking addition to a beautiful day…

Lime Fizz

INGREDIENTS:

1/4 to 1 cup Lime Simple Syrup*recipe below
1/2 cup fresh lime juice
3 1/2 cups chilled club soda

DIRECTIONS:
Fill a large pitcher with crushed ice.  Pour Lime Simple Syrup and lime juice over the ice.  Add club soda, and stir gently to combine.  For an adult beverage add 1/2 cup Vodka.

Lime Simple Syrup

1 cup sugar
1 tablespoon lime zest
1/2 cup fresh lime juice

Cook sugar and 1/2 cup water in a small saucepan over medium heat, stirring constantly, 3 minutes or until sugar is dissolved.  Remove from heat;  stir in lime zest and lime juice.  Cover and chill for at least 1 hour.

    This sounds like a perfect warm weather drink. I actually keep a jug of simple syrup in my fridge for just such an occasion. I think I'll whip one of these beauties up tomorrow!
