Roasted Turkey Breast

Having just a few people for Thanksgiving?? Why not make a turkey breast?  It’s the perfect size for just a few people and cooks lickety-split (OK, 2-3 hours instead of the usual 5 or 6), but still it’s much more manageable and tasty as well…
Roasted Turkey Breast
2 tablespoons oil
2 cloves garlic-minced
Salt & pepper to taste
1- 6 pound turkey breast
4 carrots
2 stalks celery
1 onion- cut into wedges
Preheat oven to 325 degrees.  Rub the turkey with the oil and then sprinkle on the garlic, salt and pepper to cover.  Place the carrots, celery and onion on the bottom of a roasting pan.  Place the turkey on top of the vegetables.  Roast for about 20 minutes per pound or until the internal temperature is 170 degrees.  Remove the turkey from the oven and tent loosely with foil for about 15 minutes before carving.

    I agree with you, if you aren't doing the crowds, why cook a full turkey — unless you like the dark meat! Love turkey breast! Joni
