Cornbread Stuffin’ Muffins

Recently, Christina asked what I serve with the Crock Pot Pork Roast and I told her that we made these muffins, so I thought I’d better post this recipe.  The picture doesn’t do justice to how yummy these are!  And so easy—-you really don’t need a recipe…
Cornbread Stuffin’ Muffins
INGREDIENTS:
1 box of  Stuffing mix
DIRECTIONS:
Make the stuffing in the microwave according to the package directions.  Feel free to add golden raisins if you like them.  Preheat the oven to 375 degrees.  Spray the muffin tin lightly with non-stick cooking spray.  Fill the cups with the stuffing (1 box will make approximately 7-8 muffins).  Bake for about 8-10 minutes, the muffins will be crunchy on the outside and soft in the middle.  Ladle some mushroom gravy over them and ooh-la-la!!
**Any flavor of stuffing mix will work the same

    I think this is a great idea! Even for turkey. I never actually stuff my turkey with stuffing–just an onion, carrot, celery, apple etc.. A platter full of these little gems will be very nice. Thanks for the idea.
