Sugar Donut Muffins
Today, in honor of Mandy’s 32nd birthday (and because she put in a request!) we are having something super sweet to eat!
Mmmm, I love sugar donuts, but don’t like to deep fry so when I found this recipe around the webosphere, I knew I had to make it! And after the first time, I have been dreaming up all kinds of wonderful additions for the next times…Happy Birthday, Girlfriend!!
Sugar Donut Muffins
INGREDIENTS:
3/4 cup sugar
1 large egg
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup vegetable oil
3/4 cup milk (low fat is fine)
1 teaspoon vanilla extract
2 tablespoons butter, melted
1/2 cup sugar, for topping
DIRECTIONS:
Preheat oven to 350 degrees. Lightly grease a muffin tin with cooking spray (I used a mini-muffin tin). In a large bowl, beat together the sugar and egg until light in color. In a small bowl, whisk together flour, baking powder and salt. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract. Divide batter evenly into the muffin cups (I used a small ice cream scoop), filling each about 3/4 full. Bake for 12-14 minutes (15-18 minutes if using large muffin tins). When muffins are done, lightly brush the tops with the melted butter and dip into a bowl of sugar. Cool on a wire rack.
Next time, I may add: mini chocolate chips, roll in powdered sugar or drizzle with melted chocolate, mmmm!

A great addition to this recipe is adding 1/4 t. nutmeg to the batter and 1 t. of cinnamon to the sugar for the topping. A wonderful twist!!
I've always wanted to try this recipe because while I love donuts (boy do I!) I don't like to fry. These look delish!
I love sugar donuts. I will be trying these for Sunday breakfast! I love that they are baked and not fried in oil. YUM!
