Extreme Egg Salad Sandwiches

Our local grocery store was giving away a dozen eggs with several different purchases last week and I ended up buying 3 of the items with this offer.  So what’s a girl to do??  Make egg salad, of course…  I am also “babysitting” my mom’s rosemary plant while she is away-lucky for me- and fresh is the way to go in this recipe!!
Extreme Egg Salad
INGREDIENTS:
10 eggs-hard boiled and diced small
1 clove garlic-grated
1/4 onion-diced small
2 Clausen pickle spears-diced small
1/2 cup lite Mayonnaise
1 tablespoon horseradish
1 tablespoon yellow mustard
1 teaspoon fresh rosemary-chopped**
Salt and pepper to taste
1 teaspoon Paprika
bacon
toast
DIRECTIONS:
In a medium mixing bowl,  add all ingredients together and gently stir.  Refrigerate for 1 hour, then toast up some bread, make up some bacon and put together a terrific sandwich for yourself!

**Note to the non-flowery loving readers:  If you don’t like the smell of Roasemary, it has a very strong taste and “perfumes” the whole recipe, so omit this if you’re not into flowery tastes/smells

    Yum! This will get me out of the box with my cooking. My egg sandwiches normally consist of eggs and mayo & that's it. My family thanks you in advance for this awesome recipe.

    I have the hugest rosemary bush!! And I only ever snip it for chicken recipes. Now, I'll try it with egg sandwiches. Thank you!

    I'm always looking for new versions of egg salad sandwiches! My most recent favorite includes fennel, but this might dethrone it!

    I’m jealous of the Kalocsa paprika I can see in the background (I’m a Hungarian Aussie). :) I’d have to buy it online from Hungary if I wanted some. The sandwich looks like my kind of lunch…or snack!
