Hearty Baked Beans

Last night we were invited to Tracey & Don’s for a cookout. Tracey told me not to bring anything, but I couldn’t go empty-handed, so I racked my brain to come up with something somewhat easy to take and that would go with a multitude of main dishes (I didn’t know what they were serving). I decided on baked beans and then scoured my books to find the recipe, ran to the store for the ingredients and threw everything together while ironing the boy’s clothes for work, only to find out that Tracey had made baked beans as well! Needless to say, we had a ton of beans but both were a little different in looks, texture and ingredients. This makes a lot of beans-great for a crowd and I like to eat them as a meal with Fritos.

Hearty Baked Beans

INGREDIENTS:

1 pound ground beef
2 large onions, chopped
1/4 pound sliced bacon, cooked and crumbled
4 cans (15 ounces each) pork and beans
1 bottle (18 ounces) honey barbecue sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1/2 cup packed brown sugar
3 tablespoons cider vinegar
2 teaspoons House Seasoning (see recipe post from 6/12/09 under miscellaneous)

DIRECTIONS:

In a large dutch oven, cook the beef and onions over medium heat until meat is done; drain. Stir in the remaining ingredients. Cover and bake at 350 degrees for 1 hour or until heated through.

NOTES: In a hurry? I use the precooked bacon from Oscar Mayer which cuts down a lot on the cooking time. I’ve also used white hominy and Tracey used Lima beans.

    Vickie also adds 2 cups smoked ham-cubed and a small green chili. I have also added hotdogs to "beef" it up
