Cheeseburger Potato Pie
Last night I decided to cook in the oven, not only because I wanted to make this recipe, but because I REFUSE turn on the heat on July 16 and it was COLD in the house. Today is only suppose to get up to 58 degrees-which will be a record low-high. The good thing is I get to cook in the oven!
This recipe feeds a lot because the pie is so dense, and it’s a good thing because we ended up with a crowd unexpectedly last night. Everyone loves this meal so much, it is a mix between meatloaf and cheesy potatoes. When Adam was young, he liked to have his meatloaf “frosted” with mashed potatoes and that’s what this reminds us of.
Cheeseburger Potato Pie
Easy Level Recipe
Serves 8
INGREDIENTS:
1 1/2 pounds ground beef
1/2 cups bread crumbs
1/4 cup finely chopped onion
1/2 cup ketchup
2 teaspoons yellow mustard
1/2 teaspoon salt
1 1/2 cups water
4 tablespoons margarine
1/4 teaspoon garlic salt
1 cup milk
2 1/2 cups mashed potato flakes
1 cup shredded Cheddar cheese
3 slices cooked bacon
2 green onions or leeks
DIRECTIONS:
Preheat oven to 375 degrees. In a bowl, mix the beef, bread crumbs, onion, ketchup, mustard and salt. Press the mixture in bottom and up the sides of a 9 inch pie plate. Bake 15 minutes. In a medium saucepan, bring the water, butter and garlic salt to a boil. Remove from the heat. add milk and then stir in the potato flakes and 1/2 cup of cheese. Remove the partially baked beef crust from the oven; pour off any drippings. Spoon the potato mixture evenly into crust. Bake for 12 minutes. Top with the remaining cheese and crumbled bacon; bake 5 minutes longer. Remove from oven and top with green onions/leeks. Let stand 10 minutes before cutting. Serve with ketchup.
